Vanilla Espresso Martini
For our honeymoon we did an adventurous road trip through New Zealand followed by relaxation and diving in Fiji. We took a ton of photos while we were there, and I’m hoping to share them here in the near future. As with most things around here, its just going to take me longer than I’d like to get them up. So, in the meantime, I bring you our favorite cocktail from the honeymoon! It is from a cute little place named The Bunker in Queenstown, New Zealand. When we went, it was a chilly rainy night and we had been awake since 5 am exploring. This was a hidden treasure down a tiny side street. Just a few tables and the warmth of the fireplace, the cocktails and the food were just what we needed. Queenstown was out favorite place in New Zealand. It had so much to offer, stunning scenery, hiking, great food and shopping!
Now, for the cocktail, we created the recipe by taste, so you can adjust the measurements depending on the flavors you prefer. Ours is a little heavier on the coffee flavoring, as we felt more vodka gave it to much of a kick. You could use any coffee liqueur, such as Kahlua, and you can add more or less honey to suit your taste. I add the honey to the hot espresso to help it melt into the cocktail rather than adding it to the cold liquor. We got an espresso maker for our wedding shower (since the hubby works from home, he uses it daily), but I’m sure you could use regular coffee instead, you just might need to adjust the ratios. And, this isa good way to use up any of the vanilla vodka you might have left from this Holiday Cocktail. It makes a great before or after dinner drink…oh, who am I kidding, its a great anytime drink! Enjoy!
