Strawberry Lillet Rosé Cocktail
If you’re in need of a yummy pre-dinner Valentine’s Day cocktail, this one is perfect! I’ve heard a lot about Lillet in recent months and as we searched for wedding cocktails, I found a Lillet Rosé cocktail with gin and rose simple syrup that seemed perfect and romantic for a wedding…unfortunately, we weren’t fans. Something about drinking flowers that I just wasn’t in love with. I’m sure I’ll give floral cocktails a chance again at some point, just not yet.
So, I had this bottle of Lillet on hand, and needed more options. Lillet Rosé has hints of strawberry and bitter orange peel, so I played up those flavors with a homemade strawberry simple syrup (using this recipe but reduced to 12 ounces of fresh organic strawberries, 1 1/2 cups of water, 3/4 cup of sugar, to make just under 8 ounces of syrup) and some orange bitters. Topping it off with a little club soda adds a little fizz and lightens it all up a bit.
We don’t generally go out for Valentine’s Day, so staying in with this cocktail and a homemade dinner would be perfect for us. Sadly, this year my hubby will be in Vegas for a bachelor party…can’t you feel the love between us newlyweds?! Just kidding, we’ll be celebrating with a nice dinner out on a different weekend.
